Verdure a Fiammifferi

  Serves 8-10 People


  • 2 heads of Fennel, cut in julienne
  • 2 Red Bell Peppers, cut in julienne
  • 2 medium-sized Carrots, cut in julienne
  • 2 Yellow Zucchini, cut in julienne
  • 2 Green Zucchini, cut in julienne
  • Salt and Pepper,  to taste
  • 100 grams Butter
  • 10 sprigs of fresh herbs (Thyme, Sage, Rosemary)


  • Wash the vegetables
  • Cut the green and yellow zucchini into quarters lengthwise, remove the seeds and cut into 2″ long julienne
  • Cut the carrots into 2″ long julienne using a Mandoline
  • Mix all of the vegetables together in a bowl and keep in the refrigerator until needed
  • At service time, sautee the herbs for one to two minutes in butter
  • Add the mixed vegetables and season with salt and pepper
  • Serve immediately
