Verdure a Fiammifferi
Serves 8-10 People
Ingredients:
- 2 heads of Fennel, cut in julienne
- 2 Red Bell Peppers, cut in julienne
- 2 medium-sized Carrots, cut in julienne
- 2 Yellow Zucchini, cut in julienne
- 2 Green Zucchini, cut in julienne
- Salt and Pepper, to taste
- 100 grams Butter
- 10 sprigs of fresh herbs (Thyme, Sage, Rosemary)
Method:
- Wash the vegetables
- Cut the green and yellow zucchini into quarters lengthwise, remove the seeds and cut into 2″ long julienne
- Cut the carrots into 2″ long julienne using a Mandoline
- Mix all of the vegetables together in a bowl and keep in the refrigerator until needed
- At service time, sautee the herbs for one to two minutes in butter
- Add the mixed vegetables and season with salt and pepper
- Serve immediately
