Spiedini d’ asparagi alla griglia
Ingredients:
- 24 stalks of fresh green asparagus
- 100 ml extra virgin olive oil
- Salt and black pepper
- Fresh savory sprigs
Method:
- Peel, wash and drain the asparagus
- Cut the tough ends to have stalks of approximately 4 to 5 inches
- Save the stalks for a soup or puree
- Spread the asparagus tips on a plate and sprinkle with salt (this will tenderize themand make them less brittle)
- Line up four asparagus and skewer through twice, about 1 inch below top and bottom; drizzle with olive oil
- Preheat a grill or broiler to a moderate temperature and grill/broil asparagus skewers for about 2-3 minutes
- Meanwhile, gently warm the remaining olive oil with some fresh savory in a skillet
- After asparagus is grilled, dip both sides of skewers in the scented oil
- To serve, arrange the skewers on a serving platter and season with more of the scented olive oil; garnish with a few springs of fresh savory
