Grilled Skewers of asparagus

  Serves 4-6 People

Spiedini d’ asparagi alla griglia


  • 24 stalks of fresh green asparagus
  • 100 ml extra virgin olive oil
  • Salt and black pepper
  • Fresh savory sprigs


  1. Peel, wash and drain the asparagus
  2. Cut the tough ends to have stalks of approximately 4 to 5 inches
  3. Save the stalks for a soup or puree
  4. Spread the asparagus tips on a plate and sprinkle with salt (this will tenderize themand make them less brittle)
  5. Line up four asparagus and skewer through twice, about 1 inch below top and bottom; drizzle with olive oil
  6. Preheat a grill or broiler to a moderate temperature and grill/broil asparagus skewers for about 2-3 minutes
  7. Meanwhile, gently warm the remaining olive oil with some fresh savory in a skillet
  8. After asparagus is grilled, dip both sides of skewers in the scented oil
  9. To serve, arrange the skewers on a serving platter and season with more of the scented olive oil; garnish with a few springs of fresh savory
